Baby Spinach & Feta Salad

This salad happens to be an absolute favorite at home. The blend of baby spinach, olives and sundried tomatoes bursting with flavor and the red kidney beans, feta and walnuts mellow down the tanginess of my favorite vinaigrette dressing, this combination is an absolute winner at the table. With a perfect blend of everything nice & healthy in a bowl why would anyone crave for a high calorie alternative?
1 pack of baby spinach
150gms feta/ricotta broken up
¼ cup walnuts
¼ cup sundried tomatoes
¼ cup boiled red kidney beans
1 red onion thinly sliced
1 pickled artichoke (optional) sliced
¼ cup diced black olives
Balsamic vinaigrette or red wine vinigar dressing to taste
Salt to taste
¼ cup Shaved Parmigiana

Toss the salad with all the other ingredients and top it off with parmigiana. Serve with pasta, pizza or as is for a light dinner. If you’re dieting or health conscious skip out the parmigiana and feta.

Red Wine Vinigar dressing1/4 cup red vine vinaigrette
1 tbsp mayo
1 tbsp dijonnaise or mustard
salt
dash of lemon juice

Blend together and add to any salad of your choice. I love mind with rocket & baby spinach!
