Stir Fried Morning Glory

Here's my favorite Thai dish that is easy to cook up and tastes absolutely glorious. Stir fried Morning glory/Water spinach or Phak Boon Fai Daeng as they call it in Thai is best served immediately. A very healthy and simple dish, happens to be my li'll one's favorite too. A secret to having your Phak book taste fresh and juicy is to soak it in a bucket of cold water for an hour and break the stem and leaves instead to actually cutting it. This helps keep it tender and keeps the freshness of the greens intact. Use a wok, keep your ingredients ready and cook on high quickly.
Ingredients:
2 tbsp oil
1 bunch Morning Glory (Phak Boon as they call it in Thai)
2 -3 fresh red chilies, crushed
5 cloves garlic, crushed
1 tbsp Soy bean paste (normally use Boy brand available in any asian store)
1 tbsp Oyster sauce
1 tbsp fish sauce
1 tbsp sugar
3 tbsp stock or water
Method:
1. In a bowl mix the sauces along with the spinach.
2. Heat oil in a large work, now add in the crushed garlic & chilies and fry for about a minute.
3. Add in the morning glory and sauce mix, stir for about a minute or two.
4. Add in the stock and sugar and stir again for about 2 minutes.
5. Once the spinach is tender remove from gas. Do not overcook.

Serve with a bowl of Rice.
